Ingredients:

60g cacao butter
50g cacao powder
20–40g (1 or two tablespoons) honey or maple syrup, depending how sweet you like your chocolate
(Optional: 30g pecans, almonds or pistachios, roughly chopped.)

1 small saucepan
1 bowl (to fit over the saucepan)
1 whisk or mixing spoon
1 silicone chocolate mould tray (12-15 chocolates)

Method:

    1. Fill your saucepan about a third of the way with water and bring it to the boil.
    2. Grate or chop the cacao butter and place it in the bowl over the boiled water (this is known as a bain-marie) — you can turn off the heat, as the water will stay hot enough to melt the cacao.
    3. Occasionally stir the cacao butter until it has completely melted.
    4. Add the cacao powder and whisk until smooth — the chocolate should be quite runny at this stage.
    5. Add the honey or maple syrup and whisk — this will cause the chocolate to thicken a little. Taste for sweetness. Add more honey/maple syrup if you prefer.
    6. (Optional) Add the chopped nuts and mix in.
    7. You can now spoon the chocolate into the molds and put it in the fridge to set for an hour. The chocolates are best stored in the fridge and consumed within 7 days.
    8. Enjoy guilt free, delicious home made chocolates!
